The Hospitality Department operates from a purpose-built hospitality training centre. The delivery of courses is based on industry advice and the courses are designed to meet the industry's need for highly skilled employees.
The hospitality department offers training in hospitality and cookery.
Cookery Programs
Our Commercial Cookery Programs range from Pre-apprenticeship, Apprenticeship, Certificate II in Hospitality (Kitchen Operations), Certificate III in Hospitality (Commercial Cookery) and Certificate III in Hospitality (Patisserie), and these can articulate through to the Diploma or Advanced Diploma of Hospitality Management level.
Our facilities include 6 state of the art kitchens ranging from unit/demonstrator kitchens to our functional production kitchen. We also have 2 dedicated Patisserie kitchens.
On successful completion of these courses, graduates may gain employment as qualified chefs/cooks in a variety of outlets, including Hotels/Motels, Hospitals/Nursing Homes, Restaurants/Bistros, Shipping lines, Resorts, Reception Centres and Catering Companies.
Hospitality Programs
The hospitality programs include a diverse mix of course offerings which are aimed at the different employment sectors within the industry. For example
- Certificate level programs - accommodation services, food and beverage service and bar operations.
- Diploma and Advanced Diploma courses provide supervisory and management training for employment within hotels, clubs, restaurants, corporate caterers, event management companies.
- Dual diploma of hospitality and event management course recognises the importance of the meetings and event, exhibition and convention sector as a major employment and career stream. The course is structured to develop skills and knowledge in meetings and event management, wine tourism, hospitality management , and the management of venues and events such as nightclubs, band venues, performance/concert venues, music festivals.
- Hospitality traineeships are delivered to suit individual business requirements, for example, on-the-job workplace delivery and assessment, day release, combination of on-the-job and classroom delivery.
Training in Partnership with Industry
The department's unique philosophy of 'training in partnership with industry' enables our team to offer the most extensive range of hospitality training options in Australia. This principal underpins every aspect of our operations, resulting in enhanced training for our students and increased career opportunities for our graduates. Our training involves active participation in major industry events and projects with industry bodies and associations to provide students with industry based learning experiences. The department participates in major events such as the Spring Racing Carnival and the Grand Prix.
Facilities
The facilities at NMIT have been purpose-built in consultation with industry leaders and offer sophisticated training environments that utilise the latest in technologies and equipment.
Training facilities include:
- Two food and beverage outlets; St Georges, an 80 seat fine dining restaurant at Preston; and Level 3 Bistro, a 40 seat bistro at Collingwood
- Training bar and cellar operations
- Hotel training room, including full housekeeping training facility
- The latest hotel reservations software - Fidelio
- An international hotel management simulation exercise (CRASE-Cornell Restaurant Administrator Simulation Exercise)
- Multimedia and internet laboratories, including four computer laboratories with Windows 2000
- Access to a fully operational winery
- Changerooms and lockers
Staff
Our teaching staff are experienced and current practitioners from all sectors of the hospitality industry. In addition, our trainers hold a range of academic and industry qualifications. Our training expertise has been recognised by the high calibre of our industry partners who are part of our training team. Our partners contribute a wealth of knowledge and expertise, enable our involvement in hospitality industry events and provide access to the Victorian hospitality industry.
